CoCu on Baggot Street is closing but will be ‘reimagined’

“It’s time for change”

Lunch stalwart Cocu will close its doors after six years trading on Baggot street, but the signature blue will be swapped for green, as the team behind Cocu launches tír deli.

The deli will be “focused on seasonal Irish sandwiches and house-smoked meats,” according to the Instagram post.

“Playing with fire, fermentation, roasting, curing, pickling,” tír deli aims to “celebrate Irish food as authentically as we know how.”

“We follow the seasons, we use the food that grows around us.”

Through their lengthy food tasting process, the people behind tír deli have visited farms and producers. The team has debuted a couple of sandwiches on their Instagram account, including the “beef sandwich” made of smoke-roasted dexter beef, red onion marmalade, horseradish mayo, cheddar, and seasonal greens on a Tartine Organic Bakery sourdough.

There’s also the “smoked pork sandwich”, smoked Gloucester old spot with Ryan’s fermented rhubarb and chili jam, seasons greens, seasons pickle, mustard mayo, on a Bretzel Bakery ciabatta.

The exact date or location of the new deli is still unknown, but responding to comments on Instagram, representatives from tír deli said, “just tryin to iron out a few details before we announce the date. wanna be sure first. will be near the canal on baggot street.”

There are no plans to alter Cocu on Hatch street, which the team aims to reopen once restrictions lift.
