Copper + Straw open their first Dublin cafe

Words: Emily Mullen

The new spot is just beside the Four Courts

Copper + Straw have opened their first cafe in Dublin, expanding across the county line from their first premises in Bray, co. Wicklow.

The cafe works with suppliers like Firehouse bakery and Maison Moli, who provide a range of pastries, cakes and gluten free and vegan treats. Their house roaster is Belfast’s Bailies Coffee and they choose a different guest roaster each month. The team use three different beans on espresso; one that’s paired with milk, one served black and a high scoring coffee from their guest roaster.

Before Covid the Copper + Straw team placed a big emphasis on pour-overs and brewed with Chemex and V60, now they use the Moccamaster but they hope to “get back to hand brewing as soon as we can”.

Speaking of the opening owner Stephen Kennedy said, “none of this would be happening if it wasn’t for the overwhelming support we get every day from our wonderful customers in Bray. THANK YOU. You’re the reason dreams come true.”

Once upon a time, Kennedy wanted to become a writer, after spending hours reading books or scribbling in notebooks in coffee shops around Dublin, got Kennedy interested in coffee. A stint in Berlin which was supposed to produce some short stories instead introduced him to the world of single origins and new brewing methods. Returning to Dublin with “an empty notebook and a head full of ideas” Kennedy set himself along the path to opening his own cafe.

Working in the likes of 3fe and coffee shops all over Dublin, gave Kennedy the chance to build up his skills base and increase his knowledge enough to open Copper + Straw three years later in December 2018. “The learning curve was immense. I often wondered if I was up to it,” Kennedy admits.
