Hush announce a Mexican popup in their Rathmines spot

The popup will be curated by co-owner Jules Mak and “the amazing Mexican chefs here at hush”

Hush have found some space in their busy Rathmines kitchen to run a Mexican popup. The sandwich shop that moonlights as a burger bar announced the news that Gabo’s will be operating out of the premises for some select dates in September.

The popup which is described as an “authentic Mexican” will be running from September 17, 18, 24 and 25 out of the Hush’s Rathmines Road Lower spot.

Curated by Hush co-owner Jules Mak and “the amazing Mexican chefs here” the team wrote.

The team have debuted two of the dishes that they will be serving at the popup including stuffed jalapenos with Oaxaca cheese, caramelised onions and a chilli and courgette sauce.

Alongside, striploin steak with jalapeño chimichurri, roasted shallot and herb salt, which will also be appearing on the menu.

Hush began as a lockdown experiment that co-owner Jules created out of Mak, his other restaurant in Ranelagh. Beginning with Test Kitchen Tuesdays, which ran a different cuisine each Tuesday, which was available through Instagram pre-order, Hush was born.

A couple of months later Jules opened Hush as a takeaway in Rathmines, with his school friend Peter Burke (the owner of CrossFit353).
