Booking opens for Variety Jones

Variety Jones opens for online bookings today at 12 noon for January and February. The available seating times will be 17:00 – 17:30 and 19:45 – 20:45 Tuesday to Saturday.

Variety Jones is a small Michelin starred restaurant on Thomas Street in Dublin 8. Due to its tiny size reservations are competitive and rare as a shiny pokemon card.

Head chef and owner, Keelan Higgs opened Variety Jones in 2018. It was quietly very well received before getting its Michelin star with much media fanfare in 2020. It has been a struggle to nab a table ever since.

The restaurant takes its name from Variety Jones (Roger Thomas Clark), one of the founders of the online market Silk Road. The space is open plan with the kitchen fully visible.

There is no plant-based option or vegetarian selection, it also won’t be suitable for anyone on a dairy-free diet. The restaurant serves a set menu only. In the Irish matriarch style, you eat what you are given.
