Chimac and Table Wine Announce Crossover

Chimac will be purveying their particular brand of piping hot poultry at Table Wine for one night only on Monday, July 18.

The event will be walk-ins only as the team is not taking reservations. Judging by the success of their Hot Dog and Gamay night, this crossover is set to be a Monday to remember.

Table Wine is a play of the phrase vin de table. If by play, you mean direct translation. It has become a go-to for wine aficionados tired of trite traditions. It’s irreverent baulking at convention while being well versed in it to break the rules respectfully. Kevin Powell and Brian O’Keefe keep the vibrant colloquial diversity of the phrase they take their name from. Table wine recently announced that they would begin opening seven days a week instead of five.

Chimac burst into an already chonky chicken burger scene with an almost mythological pounce. Inspired by South Korean fried chicken, using free-range birds, Chimac has an expansive fried chicken burger menu.

Each Chimac burger takes flavour and texture to the bank and makes you want to come back for more. Not to mention their Bucky slushy and evolving brunch menu. The Chimac team recently announced its expansion into a second location in Dublin. The new spot will open in the centre of Terenure village, next to Mario’s and Sherry Fitz, two doors up from Saltwater Grocery. Chimac also sells its sauces nationwide.

This crossover looks set to be one for the winos. Pairing fried chicken with wine has been a favourite pastime, not only of mine but of many contemporary sommeliers. Pet-Nat, Cremant, or Champagne will likely play starring roles in the pairing as nothing pairs with Korean flavours like an enticingly fruity sparkler.
