Chimac is popping up at Table Wine in Dublin 8 on Monday, and their Nashville Hot chicken will be accompanied by three exclusive wines.
The event is a free for all on Monday from five. Just turn up, no reservation required and have an evening of fried chicken and wine.
Nashville Hot chicken is a fiery chicken is coated with a special (often top-secret) blend of spices, deep-fried and served up over white bread and garnished with pickles. While Nashville is still home to the original hot chicken, variations on the dish have been popping up on menus across the world, and Chimac’s is sure to be a scorcher.
From Fruit Seller Wines, they landed a massive six-litre tropical and fresh Muller-Thurgau from The Schmitts. Muller-Thurgau is a cross between Riesling and Madeleine Royal. Sometimes they can be boring, but from a quality-minded producer like The Schmitts, this wine should have the same complexity as fresh dry Riesling.
This kind of citrusy high, acid wine will pair perfectly with Chimacs Nashville Hot Chicken. It’s quite an experience to open and drink from a bottle big enough to hold eight normal bottles.
As I previously expected, there will be bubbles. David from Veraison chose a few magnums of a Blanc De Blanc Chardonnay from legend Etienne Calsac. this is a fizz with lots of minerality and attack to match the food.
Hot weather and hot chicken are made for each other. But they call for a chilled red. The team at Table Wine have selected a classic Gamay from Beaujolais winemaker Nicholas Chemarin. This is their perfect summer sipper if you’re into the redder side of life.
